The clock has started, or rather the calendar, as it takes us months to produce this wonderful coffee.

As we have shared before, we season our 100% arabica premium green unroasted coffee in a charred American oak bourbon barrel.

We sourced our barrel from Axe and the Oak, a local Colorado Springs distillery. The barrel was previously used to age craft bourbon and it lends a sweet smoky aroma, along with hints of vanilla and creme to our fresh roasted coffee. That said, it's the subtle, warm, lingering bourbon aftertaste that leaves us wanting another sip.

We will begin fresh roasting new releases every few days until it is gone.
